Key Lime, 3gal

A tart and citrusy fruit native to tropical Southeast Asia, the Key lime is a spherical citrus hybrid with a thin skin and 2.5–5 cm diameter. Usually picked green, it turns yellow when ripe. Key limes are a key part of local culture in the Keys, where they adapted well to the warm climate. In the 19th century, islanders used the juice to flavor conch, turtle, and fish steaks.
